We have at least 4 or 5 ripe tomatoes in our garden every day, along with a cup or so of the small grape tomatoes.  This is the time to enjoy them.  If you aren’t growing them in your garden, you can still buy the best tomatoes right now from the Farmer’s Markets or Chinos.  Here is the first of three recipes for great tomatoes:

Pico de Gallo

(From Cook the Part “A TASTE OF BAJA” CHAPTER)

6    large ripe red tomatoes
½  cup cilantro, chopped
1     white onion finely chopped
2    jalapeno chilies, finely chopped
Juice of 1 lime
Sea Salt

Prepare vegetables (chop cilantro, white onion and jalapeno)
Seed and chop tomatoes
Squeeze juice from lime into serving bowl
Combine all ingredients in bowl
Add salt to taste
Serve with assorted chips
