Fruit Cobbler

We have been enjoying the arrival of house guests all week.  The house is now full.  We have guests from Germany, Washington, D.C. and Salt Lake City.  To be sure that we have something tasty to offer guests upon arrival without spending the day in the kitchen, I have been relying on Barbara’s Cobbler recipe, whipping up a new and different cobbler each day.  This is an easy, foolproof recipe for a summer dessert that uses whatever is in season.  We have had blueberry, peach, apricot and plum cobbler recently.  This is good with or without ice cream.  Enjoy.

Barbara’s Cobbler Recipe

1 c. milk
1 c. flour
1 c. sugar
½ t. baking soda
3 t. baking powder

4 c. peaches or other fruit

1 stick butter

Preheat oven to 350 degrees.

Melt butter in baking dish.

Mix batter.

Add to pan.

Add fruit on top.

Bake for 45 min to 1 hour.

I cover with foil after 30 minutes to avoid getting the top too brown.

    What a great bowl of nostalgia for me. Memories of having to sit on the shoulders of my Uncle Harley to pick ripe peaches and plums in his orchards and Aunt Bobbi making cobbler. Thank you for Barbara’s recipe, Cobbler will be on the menu tonight!
