Green Peppers for Stuffing

This week I received a call from my son, Eric, who was craving stuffed peppers, a common dish from my childhood also, probably more often prepared by my mother than by me.  While I do not have her exact recipe, I tried to recreate it based on the flavors that I remember and the memory of helping her prepare these.  Always best served with mashed potatoes.  I understand Eric and Maria tried these out this week with good success.  It will be on my cooking list in the coming weeks also!

Stuffed Green Peppers

8 green bell peppers
2 tablespoons olive oil
1 large onion, chopped
3 stalks celery, chopped
3 cloves garlic, crushed
1 1/2 pounds lean ground chuck
2 teaspoons salt
1 teaspoon pepper
2 eggs, beaten
¼ cup chopped parsley
1 teaspoon dried oregano
2 cups cooked long grain rice

1 15 ounce can tomato sauce


Cut off top of pepper (stem part) and retain. Remove seeds and membranes. Rinse peppers.  Bring water to boil in large steamer pot and steam peppers, including the tops that were removed for 5 minutes.  Remove from pot, cool and set aside.

Heat olive oil in a large skillet over medium heat. Sauté onion and celery for about 6 minutes or until vegetables are tender.  Add crushed garlic and continue cooking for additional minute.  Remove from heat.

In a large mixing bowl, combine ground chuck, salt pepper, eggs, parsley, oregano, cooked rice and the cooked vegetables. Mix until well combined.  Stuff the prepared peppers with the meat mixture and place in a large baking dish.  Top the meat with the pepper tops and pour tomato sauce over the tops of the peppers.  Bake at 350° for 75 minutes.
