On Thursday night we celebrated the book launch of “The Accidental Anarchist” by Bryna Kranzler. The Accidental Anarchist is the remarkable, true story of an ordinary man who got caught up in the history-making events of the early 1900s in Poland and Russia. Despite poverty, hardship and the horrors of war, Marateck never lost his sense of humor, his faith, or the optimism that helped him survive.
My contribution to the launch party included these bite-size cupcakes. Recipes from Barbara Zaugg with a few adaptations.
CARROT CAKE MINIÂ CUPCAKES
2 cups sugar
1 1/2 cups vegetable oil
2 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
3 cups shredded carrots
Mix sugar and oil in large bowl of electric mixer. Add eggs one at a time and incorporate.
Mix dry ingredients in another bowl.
Add dry ingredients and shredded carrots to sugar mixture. Stir well.
Bake in 350Â° oven for 12 to 15 minutes until inserted toothpick comes out clean. (I use a knitting needle.)
Makes approximately 60 mini cupcakes.
BRANDY CREAM CHEESE FROSTING
2 (8 ounce) packages cream cheese
1 stick unsalted butter, room temperature
2 cups confectioners’ sugar
2 – 3 tablespoons brandy* or orange juice
In large bowl of electric mixer, beat all the ingredients until fluffy. Chill the frosting for 10 to 15 minutes until it has set up enought to spread smoothly.
*I cut open half of a vanilla bean and soaked it in the brandy overnight. This made a delicious frosting!
