Have you ever had Salmon with Tzatzki? Have you ever had Tzatziki with Avocado? I wish it was our idea, but Gary found this recipe in Bobby Flay’s Grill It! cookbook.  I then searched Avocado Tzatziki and found many recipes with this interesting variation.  Enjoy this great salmon recipe and let us know whether you know of other Tzatzki variations.

Grilled Salmon with Avocado Tzatziki, grilled lemons and green onions

Grilled Salmon with Avocado Tzatziki, grilled lemons and green onions

Combine a quarter cup of olive oil and 2 tablespoons fresh oregano leaves in blender and blend until smooth.

Brush the salmon with some of the blended olive oil and season with salt and pepper.  Grill salmon on high for 3 to 5 minutes until almost done.  Turn and grill for a few minutes more, brush with additional oil as necessary.

Brush the lemon halves with olive oil and grill  along with the green onions both are until nicely browned.

Avocado Tzatziki

2 ripe Hass avocados, peeled, pitted and chopped
4 cloves garlic, crushed (this is double what is in the Bobby Flay recipe)
1 serrano chili, chopped
1/4 cup Greek yogurt
Grated zest and juice of 1 lemon
1/2 English cucumber, finely diced
1/4 cup chopped Italian parsley, chopped
Kosher salt and freshly ground black pepper

Put avocados, garlic, chili, yogurt and lemon in food processor. Process until smooth. Transfer to bowl and add cucumber and parlsey. Refrigerate for up to 2 hours and serve over salmon.
