Linda Sierra Shares Pumpkin Cookie Recipe

Here is the recipe my mom has been making since I can remember, so at least 40 years.

Pumpkin Cookies

1 cup brown sugar
1 cup pumpkin
½ cup oil
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
½ tsp cinnamon
½ tsp nutmeg
¼ tsp ginger
1 cup raisins
½ cup walnuts

Beat together sugar, pumpkin, oil and vanilla. Sift together all dry ingredients, add to the mixture and stir until smooth. Blend in raisins and walnuts. Drop by spoonfuls onto greased cookie sheet. Bake at 350? for 12-15 minutes. Makes 3-4 dozen. I always double or triple this recipe.
